|Chicken w. Pesto & side of Low-fat Cottage Cheese and a Peach|

4 oz. Chicken breast
1 slice Jarlsberg cheese (optional)
1/2 cup Low-fat Cottage cheese
2 cups fresh Basil
1/2 Lemon (squeezed)
1/4 cup of toasted Pine Nuts
1/2 Parmigiana Cheese
1 Garlic clove
1/2 cup Olive Oil
Preparing the Meal
Combine all Pesto ingredients in a food processor. Chicken, onions, and peppers go on the grill. Flip chicken when it begins to whiten around the edges and brush with pesto sauce. Flip again, top chicken with grilled onions, peppers, and cheese (optional). Once cheese begins to melt remove from grill and plate. Plate cottage cheese and top with a sliced peach. Garnish with basil and pine nuts.
